Cognac

Cognac is a type of brandy that is produced in the Cognac region of France. It is made from white grapes that are grown in the region. Cognac is a distilled spirit that has been aged in oak barrels for at least two years. The cognac region is located in the southwest of France, near the city of Bordeaux. In 1931, the first appellation laws were put in place for cognac. The grapes used to make cognac are Ugni Blanc, Folle Blanche, Colombard, and Sauvignon blanc.

Cognac must be aged in oak barrels. The barrel is one of the most important parts of the cognac-making process. The grape harvest takes place in the middle of August. The grapes are picked by hand, then transported to the crusher. After crushing, the grape juice is left to ferment for about two weeks before undergoing distillation. The fermented grape juice is distilled twice in pot stills. The spirit is then transferred to barrels, where it undergoes a period of aging. Cognac is a type of brandy.
