Château de Fargues is one of Sauternes’ most serious sweet-wine estates and has long been associated with the Lur-Saluces family, formerly of Yquem. The wine is produced only in vintages judged worthy, and the style favours concentration, noble rot complexity and very long ageing. Built mainly on Sémillon, it offers candied citrus, honey, apricot, saffron and spice, yet always with enough acidity to stop the wine from becoming ponderous. It is a château for patient drinkers rather than instant gratification.
