Choose 24K Olive Oil for its exceptionally low acidity, ranging between 0.2% and 0.5%, well below the maximum limit of 0.8% allowed in Extra Virgin Olive Oil. Our production maintains temperatures below 27 degrees Celsius, ensuring the oil’s premium quality is preserved. Temperatures above 30 degrees Celsius can damage the oil's volatile components that give it its distinctive flavor, sometimes even causing the oil to turn reddish. 24K Olive Oil boasts a delicate green hue, perfect for enhancing the flavor of your dishes.
In our lab, we conduct comprehensive chemical analyses on our olive oil, compliant with EU and COI standards. Our tests include Olive Oil Acidity (CEE No. 2568/91 Annex II), Peroxide Number (CEE No. 2568/91 Annex III), and Ultraviolet Spectrophotometry (K270, K232, and ΔΚ) (CEE No. 2568/91 Annex IX) using SHIMADZU UV-1900i equipment. We also perform Sensory Analysis (Panel Test). In partnership with IOC and ESYD-certified external labs, we ensure top-notch quality control of our olive oil products.
